Insects—They're What's For Dinner!

Back when I lived in Brooklyn, I was, shall we say, acquainted with my share of insects as involuntary houseguests. When winter began to recede, you'd know spring was on the way as soon as you saw the first cockroach of the season.  Like any good Brooklynite, I'd crush them at the first opportunity. Art professor Marc Dennis, like most Brooklyn residents, also has a lot of insects around his apartment, but he deliberately imports them from Thailand as cooking ingredients.

"Hearing them chirp all night long is really kind of beautiful," said Mr. Dennis on a recent evening as he prepared a bug dinner. "But then you've got to eat them, of course."

In the video below, you can see Marc Dennis serving up crickets and wax worms to his guests in hummus, guacamole, cookies, and other treats. Since 2006, he's held bug dinners in his apartment about 6 to 8 times a year and eagerly the nutritional value of insects. (High in protein, low in fat.)
